Preheat your oven to 375F (190C). Line a baking tray with parchment paper and set aside. 2. Place cottage cheese in a bowl of a food processor or a blender. Blend just until smooth. Transfer to a bowl. 3. Add flour, baking powder and salt. Mix until dough forms. Transfer onto a lightly floured surface and knead for a few times until you are able to form a ball. If needed add more flour. 4. Divide the dough into 8 equal parts (about 90-100g each), roll each portion into a smooth ball. Brush each ball with beaten egg and sprinkle with your sesame seeds. 5. Bakr for 30-35 minutes or until golden. Remove from the oven and allow to cool for at least 10-15 minutes before serving. 6. Air fryer method: Preheat the air fryer to 350. Spray the air fryer basket with nonstick spray and air fry for about 10-15 minutes, until golden brown.

Cook the strawberries: In a small saucepan over medium heat, add the strawberries, 1-2 tablespoons of water. Cook for about 8-10 minutes, stirring occasionally, until they start breaking down and release their juices. Use a fork or potato masher to mash the berries to your desired consistency. 3. Add the maple, and lemon juice and simmer for another 2 minutes. 4. Add Chia Seeds: turn the heat off and stir in chia seeds. 5. Cool & Store: Remove from heat and let it sit for 5-10 minutes to thicken further. The jam will continue to set as it cools. o If you prefer a smoother texture, blend the jam using an immersion blender. o Transfer to a clean jar and store in the fridge for up to 1 week or freeze for up to 3 months. Line the bottom of a 9-inch (23cm) springform pan with a parchment paper and brush with a little bit of olive oil, dust with flour. Set aside. 2. In a bowl, stir flour, ground almond, salt and baking powder. Set aside. 3. In a bowl of a stand mixer or in bowl using a hand mixer, beat eggs and sugar on high speed for about 4-5 minutes, until light, pale and fluffy. While beating on low speed, slowly add olive oil, in steady stream until incorporated. 4. Add vanilla extract and orange zest, mix until combined. Add half of the orange juice, beat until combined, add half of the flour mixture, beat until combined. Add the remaining orange juice, beat, add the remaining flour mixture and beat until combined. 5. Pour batter into prepared pan. Bake for about 35 minutes, until a toothpick inserted in the center comes out clean. 6. Let cool, dust with powdered sugar before serving.

This helps create a golden crust and also thickens the sauce slightly later. 3. Cook the Chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken fillets and cook for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 75°C / 165°F). 4. Transfer the cooked chicken to a plate and cover loosely with foil to keep warm. 5. Make the Creamy Mushroom Sauce: In the same pan, reduce the heat to medium and add 1 tablespoon olive oil and 2 tablespoons butter. 6. Add the chopped onion and cook for 2-3 minutes, until softened. Stir in the sliced mushrooms and cook for another 5-7 minutes, stirring occasionally, until they release their juices and start to brown. This bread is gluten-free (flourless), and yeast free. ►Full written recipe: https://thecookingfoodie.com/recipe/buckwheat-bread-recipe/ ► Equipment I used in this video: https://www.amazon.com/shop/thecookingfoodie ►FOLLOW ME: Instagram: https://www.instagram.com/thecookingfoodie/ Facebook: https://www.facebook.com/thecookingfoodie Website: https://www.thecookingfoodie.com/ Ingredients: For the bread: 2¾ cups (500g) Raw buckwheat groats, *do not use toasted Note: MUST be hulled, raw buckwheat kernels/groats for this recipe to work , do not use toasted buckwheat groats 1 cup (240ml) Water 1 teaspoon Salt For the add-ins: 1 tablespoon Olive oil (optional) 1/4 cup Walnuts (optional) 2 tablespoons sunflower seeds (optional) 2 tablespoons Flaxseeds (optional) For the topping: Nigella seeds Sunflower seeds Other optional toppings and add-ins: 1-2 teaspoons Maple syrup/honey (optional) 1/2 teaspoon Baking soda (optional – for extra rise) Sesame seeds Poppy seeds Nuts of your choice Pumpkin seeds Directions: 1. Soak the Buckwheat: Rinse the buckwheat groats well under running water. Place them in a large bowl and cover with 750ml of filtered water. 2. Let them soak for 8 hours or overnight at room temperature. 3. Blend and Ferment: After soaking, do NOT rinse the buckwheat—simply drain any excess water. Transfer the soaked groats to a blender or food processor, add 1 cup (240ml) of water and blend until smooth. The consistency should be similar to pancake batter. If it's too thick, add a little water (1–2 tablespoons). 4. Pour the batter into a clean glass or ceramic bowl (avoid metal). Cover with a clean kitchen towel or plastic wrap. Let it ferment at room temperature (22–26°C or 72–78°F) for 24–36 hours. You’ll see bubbles forming, and the batter will have a slightly tangy aroma. 5. Add Salt & toppings and Bake: Once fermented, mix in salt, olive oil, maple syrup, and your favorite seeds (this step is optional - read notes) Stir well to combine. 6. Preheat your oven to 180°C (350°F). Line a ____ loaf pan with parchment paper and pour the batter in. Smooth the top and sprinkle with extra seeds if desired. 7. Bake for 50–60 minutes, or until the bread is golden brown and sounds hollow when tapped. 8. Let cool completely before slicing.

Homemade Apple Pie - 3 POUNDS OF APPLES, Easy Oil Crust

Jenny's deep dish apple pie uses 3 pounds of apples and an easy oil crust. Crust: 2 1/2 cups all purpose flour 2 Tablespoons sugar 1/2 teaspoon salt 1/2 cup milk (low fat or whole milk) 1/2 cup vegetable oil (I use avocado oil) Filling: 3/4 cup sugar 3 Tablespoons Minute tapioca (or all-purpose flour) 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 3 pounds apples, cut into 3/4-inch thick slices (9-10 cups) – I use Granny Smith (a Tablespoon of milk + a Tablespoon of sugar for topping) CRUST: 1. Preheat oven to 400° F. 2. Combine flour, sugar, and salt in a bowl. 3. Stir in milk & oil all at once and combine using a fork. Shape into a ball by hand. 4. Divide dough in two. Shape each into a 5-inch disc. Wrap one in wax paper. 5. Roll the other half between floured wax paper into a 12-inch circle and place into the ungreased pie pan. Patch where needed, trim edges, and add leftover dough to the other half. 6. Refrigerate both while you prepare filling. (Do not put the other half of the dough inside the pie pan) FILLING: 1. Combine sugar, tapioca, and spices in a large bowl. 2. Peel, quarter & core apples. Cut into 3/4-inch slices. 3. Stir apples into the tapioca mixture and place in prepared pie pan. 4. Roll top pastry between floured wax paper and place on top. Trim or flute edges. 5. Brush top with milk & sprinkle with sugar, avoiding the rim of the pastry. 6. Poke about 12 slits in the top using a sharp knife. Cut out a 1/2-inch circle in the center to release steam. Place on baking sheet in case of spills. 7. Cover the rim with a pie ring or foil. Bake for 50-55 minutes until crust is golden. Cool completely. MasterChef Canada S04 E01, 02 & 03 Full Episodes: Twenty-four finalists, in a surprise twist, were delivered their first challenge remotely: at their home/work, they had 20 minutes to gather the ingredients they would eventually use to prepare a rice dish for judges Alvin Leung, Claudio Aprile and Michael Bonancini. Eight cooks were called forward and each given a MasterChef Canada apron and a spot in the Top 12. Of the other sixteen competitors, eight were sent home while the other eight were given a second chance. For their next challenge, the remaining eight cooks were given the choice of specialized pantries put together by each of the judges. Before tasting their dishes at the end of the challenge, Justine and Matt automatically received aprons; of the remaining six, Thea and Barrie were given the final two spots while Chris, Jay, Jillian and Nii were eliminated. The mystery box contained a specific piece of kitchen equipment from the cooks' own homes. Aaron, Miranda and Trevor made the three best dishes, and Trevor won the challenge despite accidentally shattering his oven door near the end of the cook, with Alice letting him use her oven. With immunity from elimination, Trevor was given the choice of three types of fruits for the other cooks to work with; he picked the stone fruits, and was also able to save either all the men or women from elimination, choosing to save all the men. Trevor was also tasked with assigning the remaining cooks either a sweet (Alisha, Justine, Thea) or savoury (Alice, Kimberly, Mai, Miranda) dish; Alice was upset with being assigned savoury after helping Trevor during the mystery box challenge. Justine and Miranda made the two best dishes and were announced as team captains for the first team challenge of the season. The worst three dishes belonged to Mai, Thea and Alice, and the judges eliminated Alice. For their first team challenge, the home cooks were tasked with making a buffet lunch for new Canadian citizens. Each team had to make one curry and one noodle dish, one of which had to be vegetarian, with a salad side for the guests. Justine and Miranda were the Red and White Team captains, respectively. The judges gave Barrie the option to picking which team to join, and he chose to join the Red team, who were declared the winners. The home cooks from the White Team had 30 minutes to cook squid ink noodles with a soft boiled egg, including extracting the ink sac themselves. Miranda was given the option to save herself or one of her teammates, and she decided to save herself. Thea's pasta dish was considered the best, and she was the first to be saved safe. Of the remaining home cooks, Mai's dish lacked salt, Matt's egg was overcooked, and Kimberly's pasta was undercooked and her egg was broken. As her dish had the most issues, Kimberly was eliminated. "A Change of Scenery" Sometimes you need to get away. Sometimes you need to go far. Not in actual distance, but rather a bigger difference in your reality. Let's face it, life can be overwhelming... The struggle is real for all of us. Going on an adventure into the wild provides an escape from the mundane. In an effort to make our existence more relevant we overstimulate ourselves with screens that tell us what to believe. Nature offers a respite from the racket. The wild provides pure truth and wonder, along with some harsh realities that help us gain perspective on the beauty of life both our own, and those we share our experiences with. This is where we learn true fulfillment, peace and purpose through connection, love and respect. On this adventure, I continue my experimentation/R&D of my latest way to bake while camping. A very effective reflector oven made with the Firebox, Tall Windscreen, Grill Plate and the storage tin as the lid extending from the Firebox Freestyle HEX Stove. For this "go around" I wanted to test the idea commented most in my last video. Quite a few folks thought a cooking stone would be the finishing touch for tuning in the baking performance and increasing consistency. I was resistant to this idea, in hopes this reflector oven add-on could be quite minimal. My solution was to reflect more heat down to help Brown the tops of my biscuits. If you've already watched the video, you know that my commenters were right and I was wrong. The heat reflector I made didn't seem to reflect much heat. In fact it seemed to insulate the upper back area from the heat. The stone tempered and regulated the heat from below allowing a longer baking duration, which in-turn allowed the tops to brown much better than ever before and I didn't need to turn my biscuits however, turning them once would have been good too. So a permaculture garden has the chicken coop integrated into the vegetable garden sitting on the bed. It has a pond with ducks in it that you then use the eggs, the idea is everything you put in your garden should have at least two if not three or more functions for it. So you're really thinking in terms of integration and systems, rather than discrete parts. That makes sense. Rebecca asks: Does that also fit into your being a homesteader? [Charlyn continues] What does homesteading need to be, yeah they're definitely connected, one of their key ideas is a zone. So things most often used are closest to home. And then you work outward. So, the things you eat every day like the berries if you walk by and small tomatoes, they need to be right next to your house, your fruit crops can be further away. So your trees are would be at the back of your property and then you might go beyond for your wheat and your grains and things like that and even further for your chocolate, which nobody cares about. So there's the idea of zoning and permaculture ties into the idea of what you do on your homestead. And then I like the idea of thinking in terms of systems, and the inter-relatedness of things rather than everybody being unique. You see it's on my refrigerator the principles of permaculture until I took the ones that I liked the most. And I just put them around. So, the idea that you want to think about something for a long while before you act. Watch your site for a year before you plant anything, that is a permaculture concept, to be thoughtful but not waste your time. Rather than saying, this "something" is a huge problem. Instead think, how can I think differently about that problem, in this example, a dry bed. Come July, the watering system just doesn't reach back there very well because it does all of these beds first and then it gets there. So next year, Okay, what can I put in there that thrives on less water, walla, by July, 3, garlic. So I'm gonna try planting garlic next year in the dry bed area. By flipping the problem on its head, the problem becomes an opportunity to plant something new. It's, it's another way of looking at things. From the archives: Anthony Boutard of Ayers Creek Farm in Gaston, Oregon shares some of his near encyclopedic knowledge of the different varieties of heirloom corn. Transcript: Just wanted to take a minute to talk about the different types of corn, it's amazing diversity is probably has the greatest diversity of any of the grains. And it's it's a it's an intriguing plant because the corn we know evolved in a corn in a, in a continent, without steel, and without draught animals. So, it evolved, by hand, hand in stone is what I would say it's very easy it's great for the backyard gardener. It's one grain that can grow much more easily in backyard than European grains that grew, you know that evolved with the size and width draft them, animals, and that is a huge difference and you see that in all of the, the American vegetables or pretty much all of them. The sweet potatoes the potatoes, the tomatoes and peppers you see this amazing diversity, because your hand selecting your fruits your hand selecting your greens, you're looking at them and you spit the ponder them that's why corn is wonderful because you can hand select it, we have here a very dark purple husk one these can be used for dyeing fabrics, the husks on these. This was just an off type growing out in the field as the only year of its sort in the field of blue corn that I had growing here. So this is it this is a flower type corn This is a Dent Corn. And then corns and make a sticky, sticky polenta on mash. They're commonly used for animal feed these are different types of popcorn. This is Cochiti Pueblo, which is a very very diverse take this is Amish butter which we drove for popcorn. It's a sharp pointed type, what's called the right screen. And it makes also great cornmeal. And then this is called Pink Beauty we've grown this in the past. This one is such a wonderful dual purpose corn that we grow it and install both popcorn and white grits because people love white grits, and this is the first year, we're going to be trying some of these old open pollinated kernels. And the thing about these these are on sweet corn. Open pollinated sweet corn. What's neat about sweet corn is it doesn't go into the full starch synthesis. So, it shrinks down dramatically and they're always wrinkled they always have this wrinkled kernel, and this is an old test corn called Black Aztec or black Mexican. There's another one is called Rainbow Inc and these will be sweet corn fields, you'll be able to roast them or cook them over boil them up. Eat them on the summer’s eve. This is RainbowInca it's got all sorts of types in that one. Then we get into the flint corns and these are the ones we typically grow here because they're very very short season. And you can see the range of of Flint, this is a more flowery type came from the Great Lakes area. The Seneca nation. This is called White Cap is a very old variety from Rhode Island from the east coast, and the white ones are almost always associated with fish eating cultures, they go well with fish. They also great with lamb but. And then, this is what we'll be planting today. And this is called Roy’s Calais Flint. And it's more of a library of genetic types than an actual variety. It's an eight row Flint. So, these are the old New England 8 row Flint's in Connecticut in 1924 they did, they did some research and they and they were growing, I believe was 72 different types of plant corn in the state of Connecticut alone. One of the most productive corn states at that time, it's been since been taken over by the Corn Belt for Connecticut was actually a very, very productive coronary, and this is called rice calcium deficit and this is a plant a hard green corn, that makes a superb corn meal. So I just want to explain these things first and people sort of can see the range. Lucia Barbato of the Texas Tech University Center for Geospatial Technology explains the Ogallala Aquifer using sophisticated maps of the region. This underground water supply is critical for irrigation tor area farmers and it’s a finite freshwater resource that’s running dry. This is an extended interview from the 30 minute documentary we filmed in 2010 about the efforts of area stakeholders, producers (farmers), scientists, universities and state and federal government agencies, to more accurately measure water usage and find ways to extend the life of aquifer for agricultural purposes. The challenge is that while we are over at the southern end of the aquifer that's a virtually finite water supply. Because of the ability to tap that resource and use it for irrigation. A lot of it's already been used, it's a very rapid rate. We use it far in excess of it’s ability to recharge. And today we're dependent on that for agriculture as we know it. But that's changing, that change has got to come as rapidly as the decline, because we've got to learn other ways of keeping this land productive. The Ogallala Aquifer extends all the way up into South Dakota, Nebraska, Kansas, and they have a lot more water in some areas than we do here in West Texas, the Ogallala Aquifer in the southern part of Texas is cut off by the, the, the area over here that's been drained and eroded. And over here by the Pecos River. So really this is the only extent, that, that, that's left. So, we're not getting recharged anymore from the Rocky Mountains... She advocates for a sustainable model of local food production and biodiversity to combat hunger, critiquing the use of food as a geopolitical tool and emphasizing the importance of redefining food systems around sustainability and rights to food. “…food production must once again be an issue of sustainability, taking care of the earth and the human right to food must be an inalienable right.” - Dr. Vandana Shiva Trained as a physicist, Vandana Shiva is an organic farmer, social activist and renowned environmentalist. She warns that global hunger is a product of “intensive chemical farming” which turns biodiverse land into monocultures that are too costly for farmers to sustain and produces too little nutritional crops for local consumption. In this 2009 interview, Vandana Shiva talks about third world countries like her native India where agricultural communities are surrounded by fertile farmland and highly favorable growing conditions yet struggle with high rates of childhood hunger. Much of the food grown by indigenous farmers are exported to richer countries. Transcript: I think the first thing to recognize about hunger, is that today, it's a rural phenomena, it's mainly in third world countries it's mainly among communities that are actually agricultural communities. So why are people who are growing food going hungry themselves, they're going hungry, because everything they have grown has to be sold in order to pay for the costly seeds and the costly chemicals. So a high cost chemical intensive agriculture is a recipe for hunger. Secondly, The models of agriculture that chemical farming has promoted a monocultures. monocultures are nutritionally impoverished, the same acre of land. Using biodiversity using organic and ecological methods could produce five to 10 times more nutrition than a monoculture can so maximizing the production of commodities for international trade is directly proportionate to the decrease in nutrition availability to local communities which is why hunger grows. If the, the world has to be fed. It has to be fed by growing food locally, to be used locally as the biggest proportion of the food basket. Some elements will be traded internationally. But what is traded internationally should not be staple foods. What is traded internationally shouldn't be that extra flavor of spices from India, and coffee from Guatemala. That's all right. But to turn the world into a dependency on staples, has nothing to do with feeding the world, it has a lot to do with controlling the food supply. The United States evolved phrase during the Vietnam War and the war phrase was food as a weapon. The use of food as the ultimate weapon of control, and the tragedy is the growth of Agribusiness in the US has gone hand in hand with the US foreign policy to deliberately create hunger locally in order to make the world dependent on food supplies, through which you can then control countries and their decision making ability. So hunger is has become an instrument of war and food, responding to that artificially created hunger is an instrument for peace means you grow food locally you grow foods, the peace. You grow food non-violently, and the countries that are today was victims of hunger could be the highest produce of food. Africa has the largest land per eight by human being, per capita Africa is an abundant continent. And yet because of the deliberate policies. It has today been turned into a continent of under, India, which has the best source the best monsoons the highest biodiversity should not have any problem with growing in our food, and yet 70% of our children are going hungry, because the economic system is robbing them of their right to food. So, food production must once again be an issue of sustainability, taking care of the earth and the human right to food must be an inalienable right. These rights cannot be ensured through a marketplace where food has become a commodity and then a subject of speculation. We saw what speculation did in 2008 food prices doubled, and the companies that control the food system, double their profits, while riots took place in 40 countries. One of the bedrock tenets for supporters of our industrial agriculture system — monocrop farming, large scale livestock production, reliance upon chemical fertilizers, genetic engineering and pesticides, etc.— how else are we to feed the world? Fred Kirschenmann, organic farmer and distinguished Fellow at the Leopold Center for Sustainable Agriculture turns this question on its head by first pointing out that world hunger is an access problem not a supply shortage as implied by the question. In addition, Kirschenmann points out, organics can produce high yields especially when locally adapted to a particular climate and region. Fred Kirschenmann asks: How is industrial agriculture going to continue to feed the world when oil prices rise to $300 a barrel? How is industrial agriculture with its substantial contribution to climate change able to continue under extreme and increasingly more volatile weather conditions? In contrast, organic farming is more compatible with the environment, and more kinds of food will be grown on an acre of land offering greater nutritional value for eaters per acre of farmland. So we've been had millions of people starving to death. Well, in the first place, how are you going to feed the world with our industrial system, when oil prices go over $300 a barrel. Because it's absolutely dependent—our so called cheap food— is absolutely dependent on cheap energy that's not going to be there. But my other serious response that's more than what I just said. There's been enough research that's been done now. That farming organically doesn't necessarily mean a reduction in yield. If it's well managed organic, you know that the yields are essentially comparable. But the other thing is, in the first place we have not fed the world, we always see the figure 800 million people that are malnourished. It's actually more than that right now, and it's going to go up some more because of the current circumstances, and hunger. The problem of hunger is not a problem of Inadequate production. We are right now producing enough calories to feed every man woman and child on the planet. The problem of hunger is a much more complex problem of access to food, access to land, access to the resources that people need to feed themselves, that's the problem of hunger. It's not inadequate production. But even when you look at it from the point of view of production when you stop to think about it, monocultures are a very inefficient food system because you're only producing one commodity off of an acreage [of farmland]. And we know from experience, in permaculture etc., that we could in most instances be producing two, three, four, sometimes seven or eight commodities off of the same acreage, so we could dramatically increase the productivity beyond monocultures. So we have deluded ourselves into believing that the only way to feed the world is to have dramatic increases of yield of a single species. And, you know, it's just not true, and that seems to end that way of approaching a single species will require the continued access to cheap energy to surplus water and to stable climate and we're not going to have that. So if we're truly interested in feeding the world, we've got to change the food system. She also enjoys gardening, and being an active member of her local Church. Where does Gina get her recipes? The winner joined Ramsay to a taping of Good Day Live. Season 1, Episode 9: The final 3 contestants had to create a soufflé, the chef who came closest to creating the soufflé had the 1st pick in selecting an ingredient to make for service: beef, chicken or tuna, the chef that came in 2nd, can only choose what was left, the chef that came in last didn't have a choice. Season 1, Episode 10: The two final contestants prepared for their final individual challenge, where the winner would receive an advantage for dinner service. The two finalists designed their half of the Hell's Kitchen restaurant to their own themes and they chose the members of their teams from the previously eliminated contestants.
